Veggie Slaw with Aioli

Delicious as a side dish or on top of a sandwich. Try different vegetable combinations.


2 cups Green/Red Cabbage, grated

1 cup Kale, thinly chopped

1/2 cup Carrot, grated

1/2 cup Beet/Fennel/Diakon/Radish/Turnip, grated

2 Green Onions, chopped

Handful of Parsley, chopped


3 cloves Garlic

1 teaspoon coarse Salt

1 teaspoon black Pepper

1 tablespoon Lemon Juice/Apple Cider Vinegar

2 Egg Yolks

1/2 Olive Oil


Make dressing by placing garlic, salt, pepper, lemon

juice/vinegar, and egg yolks in a blender. 

Blend until combined and while the blender is still running, slowly pour olive oil into blender. 

Blend until consistancy is creamy.

Assemble slaw by mixing all vegetables in a large bowl.

Add dressing and chopped parsley and stir to combine.

Store in fridge until ready to serve.
