A spicy accompaniment to meat or vegetable dishes.
Diakon Radish, grated, enough to almost fill the glass jar you are using
1-2 teaspoons Coarse Salt
1-2 teaspoons Sugar
White Vinegar, enough to fill the rest of the jar
Pack grated diakon into jar.
Sprinkle with salt and sugar.
Pour vinegar over until all the diakon is submerged.
Stir to dissolve sugar and salt and press all the air out of the jar with a spoon.
Seal jar and refrigerate.
Should keep for several weeks.
