A great refreshing summer soup.
1 large Armenian Cucumber (or any kind is great too) half of it diced
1/4 cup Red Onion, diced
2 Green Onion, diced
1 Pepper, diced
8 oz Greek yogurt
2 tablespoons Sour Cream
2 tablespoons Fresh Lime Juice
1 to 2 teaspoons Rice Wine Vinegar
2 tablespoons Fresh Dill or Cilantro (one or the other)
Pinch of natural sugar or brown sugar
Sea Salt & Fresh Ground Pepper to taste
Pulse in a blender half the cucumber, the red onion and yogurt. Do NOT over-blend. You want it relatively smooth but not pureed.
Dice small the rest of the veggies and add to the blended mixture. Add lime, sour cream and seasonings to taste.
Adjust seasonings, lime and sour cream to your tastes. If you would like the soup thinner, just add a bit more sour cream. Mix well but do not blend at this point.
Finely chop the green onion, cilantro or dill for garnish.
