Roasted Root Vegetables

 

Ingredients-

3 lbs root vegetables, cut into 1 inch pieces. (Try Carrots, Beets, Potatoes, Turnips, Radishes, mixed or by themselves)

1-2 cloves Garlic, minced

2 tablespoons Olive Oil

1 teaspoon Coarse Salt

1 tablespoon Spice/Herb, try Curry Powder or chopped Sage or Rosemary or Cinnamon

Directions
Heat oven to 350 degrees.

Mix all ingredients in a glass baking dish.

Roast for 25-30 minutes.
