Great to heat up for breakfast all week.
A few handfuls of whatever vegetables you have lying around, chopped into 1 inch pieces.
Any combination of root vegetables and leafy greens will do.
Kale, Potato, Carrot, Radish, Squash, try them all
2 cloves Garlic, minced
3 Green Onion, chopped
Optional: Goat Cheese
Heat garlic and green onion in an oven safe pan with some olive oil on medium heat until soft.
Add rest of veggies to pan, but save chopped greens if using till later.
Sautee veggies until tender, add chopped greens and cook until greens have wilted.
Crack eggs into a bowl and whisk together.
Pour over sauteed vegetables and cook on medium heat for 5 minutes.
If using, crumble goat cheese on top of eggs.
Turn broiler on low in oven and place pan on top rack.
Broil for 7-10 minutes until top is set, puffy, and browned.
If top begins to burn, turn broiler off and bake at 350 degrees until set.
